Peanut Butter Banana Fro-Yo Bark

Ingredients

  • Parchment paper 
  • ¾ cup / 185 g reduced-fat (2%) plain Greek yogurt 
  • 1 scoop Cookies & Creamy Shakeology
  • 1 tsp. pure vanilla extract
  • 1 tsp. cacao nibs
  • 1 large banana, sliced
  • 2 tsp. all-natural peanut butter
  • Plastic wrap 

Instructions

  • Line a 9 x 13-inch (23 x 33-cm) baking dish with parchment paper. Set aside. 
  • Add yogurt, Shakeology, extract, and cacao nibs to a medium mixing bowl; stir until combined.  
  • Spread yogurt mixture evenly on parchment paper to desired thickness. Top with banana. 
  • Place peanut butter in a small bowl; microwave for 30 seconds or until melted.  Drizzle over yogurt mixture.  
  • Cover tightly with plastic wrap. Freeze for 2 hours, or until firm. 
  • Cut (or break) into bite-sized pieces; serve immediately, or freeze in an airtight container for up to 1 month.
